This is an easy recipe for a soft, rich banana bread packed with walnuts and raisins. It bakes into a tender loaf perfect for breakfast or snacks.
Ingredients
- 3 very ripe bananas mashed
- 1/2 cup unsalted butter softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1 cup chopped walnuts
- 1/2 cup raisins
Instructions
- Preheat oven to 350°F. Grease a standard loaf pan.
- Cream together softened butter and sugar until light and smooth in a bowl.
- Add mashed bananas and eggs. Mix until fully combined.
- Whisk flour, baking soda, and salt in a separate bowl. Add dry ingredients to the wet mixture and stir until just combined.
- Stir in vanilla extract, walnuts, and raisins.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 55 to 60 minutes or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- Use very ripe bananas with dark spots for the best flavor and moisture.
