Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 batch buttercream frosting for sugar cookies


Instructions

  1. Preheat oven to 350°F. Prepare a 9×13 inch baking dish by lining it with foil or parchment paper, or by spraying it with nonstick cooking spray. If using foil, spray it with nonstick spray.
  2. In a stand mixer or large bowl with a hand mixer, cream together the softened butter and sugar on medium speed for 1-2 minutes until smooth.
  3. Add the egg, vanilla extract, and almond extract (if using). Mix until combined.
  4. Add the flour, baking powder, and salt. Mix until just combined. Do not overmix.
  5. Scoop the cookie dough into the prepared baking dish. Spread it into a flat, even layer. Lightly spray your hands with nonstick cooking spray before pressing the dough into the pan.
  6. Bake for 20-25 minutes, or until the edges are set and lightly golden brown, and the center is no longer shiny. A toothpick inserted into the center should come out clean. Avoid overbaking to prevent dry, crumbly bars.
  7. Remove from the oven and let cool completely to room temperature. Do not frost until the bars are fully cooled, or the frosting will melt.
  8. Prepare your buttercream frosting and spread it evenly over the cooled sugar cookie bars. Slice and serve.
