Easy sugar cookie bars with a simple buttercream frosting, perfect for beginners.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1/4 teaspoon almond extract (optional)
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 batch buttercream frosting for sugar cookies
Instructions
- Preheat oven to 350°F. Prepare a 9×13 inch baking dish by lining it with foil or parchment paper, or by spraying it with nonstick cooking spray. If using foil, spray it with nonstick spray.
- In a stand mixer or large bowl with a hand mixer, cream together the softened butter and sugar on medium speed for 1-2 minutes until smooth.
- Add the egg, vanilla extract, and almond extract (if using). Mix until combined.
- Add the flour, baking powder, and salt. Mix until just combined. Do not overmix.
- Scoop the cookie dough into the prepared baking dish. Spread it into a flat, even layer. Lightly spray your hands with nonstick cooking spray before pressing the dough into the pan.
- Bake for 20-25 minutes, or until the edges are set and lightly golden brown, and the center is no longer shiny. A toothpick inserted into the center should come out clean. Avoid overbaking to prevent dry, crumbly bars.
- Remove from the oven and let cool completely to room temperature. Do not frost until the bars are fully cooled, or the frosting will melt.
- Prepare your buttercream frosting and spread it evenly over the cooled sugar cookie bars. Slice and serve.
