Ingredients
- 6 cups baby spinach leaves
- 1 pint fresh strawberries, hulled and sliced
- 1/2 small red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1/2 cup toasted pecans
- 1/4 cup extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Prepare the Dressing: Whisk olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper in a small bowl until emulsified. Set aside.
- Assemble the Salad: Combine spinach, sliced strawberries, and red onion in a large mixing bowl.
