Description
This strawberry shortcake layer cake features fluffy vanilla sponge, juicy strawberries, and whipped cream for a light, elegant spring dessert.
Ingredients
- 1 ½ cups all-purpose flour
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- 4 large eggs, room temperature
- ¾ cup granulated sugar
- ¼ cup neutral oil (such as vegetable or canola)
- ¼ cup whole milk, room temperature
- 2 teaspoons pure vanilla extract
- 2 cups fresh strawberries, hulled and thinly sliced
- 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
- ½ cup strawberry jam
- 2 tablespoons water
- 2 cups heavy whipping cream, chilled
- ½ cup powdered sugar
- 1 teaspoon pure vanilla extract
Instructions
- Preheat oven to 350°F. Grease and line two 8-inch round cake pans with parchment paper.
- Whisk together flour, baking powder, and salt in a medium bowl. Set aside.
- Beat eggs and sugar in a large bowl with an electric mixer on high speed for 3–4 minutes until thick and pale.
- Add oil, milk, and vanilla. Mix until combined. Gently fold in dry ingredients using a spatula until just incorporated.
- Divide the batter evenly between pans and smooth the tops.
- Bake for 22–25 minutes, until the tops are lightly golden and a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes, then transfer to a wire rack.
- For the strawberry filling, combine strawberries, sugar, and lemon juice. Let sit for 15 minutes to macerate.
- For the syrup, warm jam and water in a small saucepan over low heat until smooth. Brush over the tops of the cooled cake layers.
- For the frosting, beat chilled cream, powdered sugar, and vanilla until stiff peaks form.
- To assemble, place one cake layer on a serving plate. Spread a layer of whipped cream, then spoon half of the strawberries on top. Add the second cake layer and repeat with whipped cream and remaining strawberries.
- Chill for 30 minutes before serving to set the layers.
