Description
Light, creamy, no-bake mini parfaits featuring macerated strawberries and vanilla whipped cream. This dessert assembles quickly for spring entertaining.
Ingredients
- 2½ cups fresh strawberries sliced
- 3 tablespoons granulated sugar
- 2 cups heavy whipping cream cold
- ¾ cup powdered sugar
- 1 teaspoon vanilla extract
- Fresh strawberries for garnish
Instructions
- Place sliced strawberries in a bowl and sprinkle with granulated sugar. Stir gently.
- Cover and refrigerate for at least 45 minutes until strawberries release juices.
- Whip heavy cream in a large bowl on medium speed until slightly thickened.
- Increase speed to high and beat until soft peaks form.
- Add powdered sugar and vanilla extract. Beat until stiff peaks form.
- Spoon whipped cream into a piping bag or keep in the bowl.
- Spoon some macerated strawberries into the bottom of small serving glasses.
- Add a layer of whipped cream, followed by another layer of strawberries.
- Finish with a final layer of whipped cream.
- Garnish with fresh strawberries.
- Serve immediately or chill up to 2 hours.
