Description
This crockpot sticky sesame ginger chicken is sweet, savory, and packed with tender chicken, Brussels sprouts, and bold sesame flavor.
Ingredients
- 2 pounds boneless skinless chicken breasts or thighs
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon ground ginger
- 1/2 teaspoon black pepper
- 2 tablespoons all purpose flour
- 1/2 cup low sodium soy sauce
- 1/3 cup pomegranate juice
- 2 tablespoons honey
- 1 tablespoon molasses
- 1 tablespoon creamy peanut butter
- 1 teaspoon red chili flakes
- 1 tablespoon chopped pickled ginger
- 1 tablespoon toasted sesame oil
- 3/4 pound Brussels sprouts, halved
- 3 cups cooked rice
- 2 tablespoons sliced green onions
- 1 tablespoon sesame seeds
- 1 cup pomegranate arils
Instructions
- Place the chicken in the bottom of a large slow cooker.
- Sprinkle the garlic powder, onion powder, ground ginger, black pepper, and flour over the chicken. Toss until evenly coated.
- In a medium bowl, whisk together the soy sauce, pomegranate juice, honey, molasses, peanut butter, red chili flakes, pickled ginger, and sesame oil.
- Pour the sauce mixture over the chicken and add the Brussels sprouts around the edges.
- Cover and cook on low for 4 hours or on high for 2 hours until the chicken is tender and fully cooked.
- Cook the chicken to an internal temperature of 165 degrees F for safe serving.
- Remove the lid and shred the chicken directly in the slow cooker using two forks.
- Turn the slow cooker to high and cook uncovered for 15 to 20 minutes until the sauce thickens slightly.
- Divide the cooked rice among serving bowls and top with the sticky sesame ginger chicken and Brussels sprouts.
- Garnish with green onions, sesame seeds, and pomegranate arils before serving.
Notes
- Chicken thighs stay especially juicy in the slow cooker, but chicken breasts also work well if cooked just until tender.
