Ingredients
- 1 ½ pounds boneless skinless chicken breasts, cut into 1 inch cubes
- 2 tablespoons cornstarch
- 2 tablespoons olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup low sodium soy sauce
- 2 tablespoons honey
- 1 tablespoon brown sugar
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 2 tablespoons water
- 3 cups cooked white rice
- 1 cup shredded carrots
- 1 cup sliced cucumber
- 1 cup edamame, cooked
- 1 avocado, sliced
- 1 tablespoon sesame seeds
- 2 tablespoons sliced green onions
Instructions
- Toss chicken cubes with cornstarch, salt, and black pepper until evenly coated.
- Heat olive oil in a large skillet over medium high heat. Add chicken in a single layer and cook for 6 to 8 minutes, turning occasionally, until golden and cooked through.
- In a bowl, whisk soy sauce, honey, brown sugar, rice vinegar, sesame oil, garlic, ginger, and water.
- Pour the sauce into the skillet with the cooked chicken and cook for 2 to 3 minutes, stirring, until the sauce thickens and coats the chicken.
- Divide cooked rice into serving bowls.
- Top with sticky sesame chicken, shredded carrots, sliced cucumber, edamame, and avocado.
- Sprinkle sesame seeds and sliced green onions over the top.
- Serve immediately while warm.

- For extra texture, lightly toast the sesame seeds in a dry pan before garnishing.
