Description

Sticky sesame chicken poke bowl with fluffy rice and fresh toppings. A flavorful, easy meal perfect for weeknights and meal prep.


Ingredients

  • 1 ½ pounds boneless skinless chicken breasts, cut into 1 inch cubes
  • 2 tablespoons cornstarch
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup low sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons water
  • 3 cups cooked white rice
  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • 1 cup edamame, cooked
  • 1 avocado, sliced
  • 1 tablespoon sesame seeds
  • 2 tablespoons sliced green onions


Instructions

  1. Toss chicken cubes with cornstarch, salt, and black pepper until evenly coated.
  2. Heat olive oil in a large skillet over medium high heat. Add chicken in a single layer and cook for 6 to 8 minutes, turning occasionally, until golden and cooked through.
  3. In a bowl, whisk soy sauce, honey, brown sugar, rice vinegar, sesame oil, garlic, ginger, and water.
  4. Pour the sauce into the skillet with the cooked chicken and cook for 2 to 3 minutes, stirring, until the sauce thickens and coats the chicken.
  5. Divide cooked rice into serving bowls.
  6. Top with sticky sesame chicken, shredded carrots, sliced cucumber, edamame, and avocado.
  7. Sprinkle sesame seeds and sliced green onions over the top.
  8. Serve immediately while warm.

  • For extra texture, lightly toast the sesame seeds in a dry pan before garnishing.
