Ingredients
- 2 large eggs
- 1 cup fresh spinach, roughly chopped
- 1/4 cup crumbled feta cheese
- 1 small garlic clove, minced
- 1 tablespoon olive oil
- 2 whole wheat or spinach tortillas (8-10 inch)
- Salt and freshly ground black pepper to taste
- 1 tablespoon chopped fresh parsley or dill (optional)
Instructions
- Heat olive oil in a nonstick skillet over medium heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Add chopped spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper.
- In a small bowl, beat eggs with a pinch of salt and pepper.
- Pour eggs into the skillet with spinach and cook, stirring gently until eggs are softly scrambled, about 2-3 minutes.
- Remove from heat and stir in crumbled feta and fresh herbs if using.
- Warm tortillas briefly in a dry skillet or microwave for 15 seconds to make pliable.
- Divide the spinach and feta egg mixture evenly between tortillas.
- Roll up each tortilla tightly to form a wrap.
- Optionally, place wraps seam-side down in the skillet to crisp slightly for 1-2 minutes.
- Serve immediately while warm.
