Ingredients
- 2 large chicken breasts, cut into 1-inch pieces
- 1/2 cup cottage cheese
- 1/4 cup chopped fresh spinach
- 1/2 cup artichoke hearts, drained and chopped
- 2 cloves garlic, minced
- 1/4 cup grated parmesan cheese
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Cut chicken breasts into 1-inch pieces and place in a mixing bowl.
- Add cottage cheese, spinach, artichoke hearts, garlic, and Parmesan cheese to the chicken. Mix until well combined.
- Pour olive oil into a 9×13-inch baking pan to coat the bottom. Spread the chicken mixture evenly in the pan.
- Bake uncovered for 25-30 minutes, or until chicken is cooked through.
- Serve hot. Garnish with additional spinach if desired.
