Description

Crisp Asian cucumber salad tossed in a savory, tangy, and slightly spicy dressing. Quick, refreshing, and perfect as a side dish.


Ingredients

  • 2 large cucumbers thinly sliced
  • 1 teaspoon salt
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon honey
  • 2 cloves garlic finely minced
  • 1 teaspoon chili flakes
  • 1 teaspoon sesame seeds
  • 1 green onion thinly sliced


Instructions

  1. Place the sliced cucumbers in a bowl and sprinkle with salt. Let sit for 10 minutes to draw out excess moisture.
  2. Drain the cucumbers and gently squeeze out any remaining liquid. Pat dry if needed.
  3. In a separate bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, garlic, and chili flakes.
  4. Add the cucumbers to the dressing and toss until evenly coated.
  5. Sprinkle with sesame seeds and green onions. Toss lightly.
  6. Serve immediately or chill for 10 to 15 minutes for deeper flavor.
