Description
Make soft brioche dinner rolls with a rich buttery crumb. This easy recipe creates fluffy, golden rolls perfect for any meal or gathering.
Ingredients
- 3 1/4 cups all purpose flour
- 1/4 cup granulated sugar
- 2 1/4 teaspoons active dry yeast
- 1 teaspoon salt
- 3 large eggs room temperature
- 1/2 cup whole milk warm
- 10 tablespoons unsalted butter softened and cut into pieces
- 1 egg
- 1 tablespoon milk
Instructions
- Warm the milk until it feels just slightly warm to the touch, then stir in the yeast and a pinch of the sugar. Let it sit for 5 to 7 minutes until foamy.
- In a large mixing bowl combine flour, remaining sugar, and salt. Add the eggs and yeast mixture and mix until a shaggy dough forms.
- Knead the dough by hand or with a mixer on medium speed for 6 to 8 minutes until it becomes smooth.
- Add the softened butter one piece at a time, mixing well after each addition until fully incorporated. Continue kneading for another 5 to 7 minutes until the dough is soft and slightly tacky.
- Place the dough in a lightly greased bowl, cover, and let rise in a warm spot for 1 to 1 1/2 hours until doubled in size.
- Punch down the dough and divide into 12 equal portions. Shape each into a smooth ball and place in a greased 9 by 13 inch baking dish.
- Cover and let the rolls rise again for 45 to 60 minutes until puffy and touching.
- Preheat the oven to 350 degrees F.
- Whisk together egg and milk, then gently brush over the tops of the rolls.
- Bake for 20 to 25 minutes until golden brown and the tops sound hollow when tapped.
- Let cool slightly before serving warm.
Notes
- For extra softness, brush the warm rolls lightly with a bit of melted butter right after baking.
