Description

Make soft brioche dinner rolls with a rich buttery crumb. This easy recipe creates fluffy, golden rolls perfect for any meal or gathering.


Ingredients

  • 3 1/4 cups all purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons active dry yeast
  • 1 teaspoon salt
  • 3 large eggs room temperature
  • 1/2 cup whole milk warm
  • 10 tablespoons unsalted butter softened and cut into pieces
  • 1 egg
  • 1 tablespoon milk


Instructions

  1. Warm the milk until it feels just slightly warm to the touch, then stir in the yeast and a pinch of the sugar. Let it sit for 5 to 7 minutes until foamy.
  2. In a large mixing bowl combine flour, remaining sugar, and salt. Add the eggs and yeast mixture and mix until a shaggy dough forms.
  3. Knead the dough by hand or with a mixer on medium speed for 6 to 8 minutes until it becomes smooth.
  4. Add the softened butter one piece at a time, mixing well after each addition until fully incorporated. Continue kneading for another 5 to 7 minutes until the dough is soft and slightly tacky.
  5. Place the dough in a lightly greased bowl, cover, and let rise in a warm spot for 1 to 1 1/2 hours until doubled in size.
  6. Punch down the dough and divide into 12 equal portions. Shape each into a smooth ball and place in a greased 9 by 13 inch baking dish.
  7. Cover and let the rolls rise again for 45 to 60 minutes until puffy and touching.
  8. Preheat the oven to 350 degrees F.
  9. Whisk together egg and milk, then gently brush over the tops of the rolls.
  10. Bake for 20 to 25 minutes until golden brown and the tops sound hollow when tapped.
  11. Let cool slightly before serving warm.

Notes

  • For extra softness, brush the warm rolls lightly with a bit of melted butter right after baking.
