Ingredients
- 1 pound smoked beef sausage, sliced into half-inch rounds
- 1.5 pounds Yukon Gold potatoes, diced into half-inch cubes
- 2 tablespoons olive oil
- 1 cup diced yellow onion
- 1 cup diced green bell pepper
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 0.5 teaspoon dried thyme
- 0.5 teaspoon salt
- 0.5 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Heat a large skillet over medium heat and add 1 tablespoon olive oil. Add sliced sausage and cook for 4 to 5 minutes until browned. Remove and set aside.
- Add remaining olive oil to the skillet and add diced potatoes in an even layer. Cook for 10 minutes, stirring occasionally, until they begin to soften and develop a golden crust.
- Add diced onion and green bell pepper to the skillet. Cook for 5 to 6 minutes until vegetables are softened.
- Stir in minced garlic, paprika, thyme, salt, and black pepper. Cook for 1 minute until fragrant.
- Return the sausage to the skillet and mix everything together evenly.
- Continue cooking for another 5 to 7 minutes, stirring occasionally, until potatoes are tender inside and crispy on the outside.
- Remove from heat and sprinkle with fresh parsley before serving.
