Description

A hearty, savory one-pan meal with crispy potatoes, flavorful sausage, and simple seasonings, ready in under 40 minutes.


Ingredients

  • 1 pound smoked beef sausage, sliced into half-inch rounds
  • 1.5 pounds Yukon Gold potatoes, diced into half-inch cubes
  • 2 tablespoons olive oil
  • 1 cup diced yellow onion
  • 1 cup diced green bell pepper
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Heat a large skillet over medium heat and add 1 tablespoon olive oil. Add sliced sausage and cook for 4 to 5 minutes until browned. Remove and set aside.
  2. Add remaining olive oil to the skillet and add diced potatoes in an even layer. Cook for 10 minutes, stirring occasionally, until they begin to soften and develop a golden crust.
  3. Add diced onion and green bell pepper to the skillet. Cook for 5 to 6 minutes until vegetables are softened.
  4. Stir in minced garlic, paprika, thyme, salt, and black pepper. Cook for 1 minute until fragrant.
  5. Return the sausage to the skillet and mix everything together evenly.
  6. Continue cooking for another 5 to 7 minutes, stirring occasionally, until potatoes are tender inside and crispy on the outside.
  7. Remove from heat and sprinkle with fresh parsley before serving.
