Description

Smashburger quesadillas combine crispy seasoned beef, gooey melted cheese, and golden tortillas into one irresistible dinner.


Ingredients

  • 1 pound ground beef
  • 4 large flour tortillas
  • 2 cups shredded cheddar and Monterey Jack cheese blend
  • 2 teaspoons seasoning salt
  • 1 tablespoon butter
  • 1/4 cup mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon yellow mustard
  • 1 teaspoon pickle juice
  • 1/4 teaspoon garlic powder
  • 1/4 cup finely diced white onion (optional)
  • 1/4 cup sliced pickled jalapeños (optional)
  • 1/2 cup dill pickle slices (optional)


Instructions

  1. Divide the ground beef into 4 equal portions and shape each portion into a loose ball.
  2. Sprinkle the beef evenly with seasoning salt on all sides.
  3. Heat a large skillet or griddle over high heat until very hot. Add the butter and let it melt completely.
  4. Place one beef ball onto the hot skillet and smash it flat with a spatula until it is slightly larger than the tortilla center. Cook for 2 to 3 minutes until deeply browned and crisp around the edges.
  5. Place one tortilla directly over the beef and press lightly so the tortilla sticks to the meat.
  6. Sprinkle 1/2 cup shredded cheese over one half of the tortilla. Add diced onion, pickled jalapeños, or pickle slices if desired.
  7. Carefully flip the quesadilla so the tortilla side is now facing down. Fold the empty half of the tortilla over the cheesy side to create a half-moon shape.
  8. Cook for 1 to 2 minutes per side until the tortilla is golden brown and crisp and the cheese is fully melted.
  9. Repeat with the remaining beef and tortillas. Ensure the beef reaches an internal temperature of 160 degrees Fahrenheit before serving.
  10. In a small bowl, whisk together the mayonnaise, ketchup, yellow mustard, pickle juice, and garlic powder.
  11. Slice the quesadillas and serve hot with the special sauce on the side.
