Description
Smashburger quesadillas combine crispy seasoned beef, gooey melted cheese, and golden tortillas into one irresistible dinner.
Ingredients
- 1 pound ground beef
- 4 large flour tortillas
- 2 cups shredded cheddar and Monterey Jack cheese blend
- 2 teaspoons seasoning salt
- 1 tablespoon butter
- 1/4 cup mayonnaise
- 1 tablespoon ketchup
- 1 teaspoon yellow mustard
- 1 teaspoon pickle juice
- 1/4 teaspoon garlic powder
- 1/4 cup finely diced white onion (optional)
- 1/4 cup sliced pickled jalapeños (optional)
- 1/2 cup dill pickle slices (optional)
Instructions
- Divide the ground beef into 4 equal portions and shape each portion into a loose ball.
- Sprinkle the beef evenly with seasoning salt on all sides.
- Heat a large skillet or griddle over high heat until very hot. Add the butter and let it melt completely.
- Place one beef ball onto the hot skillet and smash it flat with a spatula until it is slightly larger than the tortilla center. Cook for 2 to 3 minutes until deeply browned and crisp around the edges.
- Place one tortilla directly over the beef and press lightly so the tortilla sticks to the meat.
- Sprinkle 1/2 cup shredded cheese over one half of the tortilla. Add diced onion, pickled jalapeños, or pickle slices if desired.
- Carefully flip the quesadilla so the tortilla side is now facing down. Fold the empty half of the tortilla over the cheesy side to create a half-moon shape.
- Cook for 1 to 2 minutes per side until the tortilla is golden brown and crisp and the cheese is fully melted.
- Repeat with the remaining beef and tortillas. Ensure the beef reaches an internal temperature of 160 degrees Fahrenheit before serving.
- In a small bowl, whisk together the mayonnaise, ketchup, yellow mustard, pickle juice, and garlic powder.
- Slice the quesadillas and serve hot with the special sauce on the side.
