Description

Smashburger quesadilla cooked in a crispy skillet with juicy beef, melty cheese, and a golden tortilla. A quick, satisfying dinner perfect for summer nights.


Ingredients

  • 1 pound ground beef, divided into 4 portions
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 4 large flour tortillas
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup finely diced onion
  • 1/2 cup diced tomato
  • 1 cup shredded lettuce
  • 1/3 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1/2 teaspoon paprika
  • 1 tablespoon vegetable oil


Instructions

  1. Mix mayonnaise, ketchup, mustard, and paprika in a small bowl until smooth. Set aside.
  2. Heat a large skillet or griddle over medium-high heat. Add vegetable oil and heat until shimmering.
  3. Place one portion of ground beef onto the hot skillet. Press it flat with a spatula to about 1/4 inch thickness. Season with salt, pepper, and garlic powder.
  4. Cook for 2 to 3 minutes until the edges are deeply browned and crispy. Flip and cook for another 1 to 2 minutes until fully cooked through. Repeat with remaining portions. Cook beef to an internal temperature of 160°F.
  5. Reduce heat to medium. Place a tortilla in the skillet and sprinkle cheddar and mozzarella cheese over half of it.
  6. Add one cooked smashburger patty on top of the cheese, then sprinkle diced onion and tomato over the patty.
  7. Drizzle a spoonful of sauce over the filling, then fold the tortilla in half.
  8. Cook for 2 to 3 minutes per side until the tortilla is golden brown and crispy and the cheese is fully melted.
  9. Remove from the skillet and let rest for 1 minute. Slice into wedges and top with shredded lettuce.
  10. Repeat with remaining tortillas and fillings. Serve warm with extra sauce if desired.

Notes

  • Press the beef very thin for crispy edges and avoid moving it too early so a crust can form.
  • Cook quesadillas one at a time to keep them evenly crisp.
