Description

Crispy smash burger quesadilla loaded with juicy beef, melted cheese, and tangy pickles. A quick comfort meal perfect for busy nights.


Ingredients

  • 1 pound ground beef
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon finely chopped pickles
  • 4 large flour tortillas
  • 1 ½ cups shredded cheddar cheese
  • ½ cup diced onion
  • ½ cup sliced pickles
  • 1 tablespoon olive oil


Instructions

  1. In a small bowl, mix mayonnaise, ketchup, mustard, and chopped pickles until smooth. Set aside.
  2. Divide ground beef into 4 equal portions. Place each portion onto a tortilla and press it thinly to cover most of the surface. Season evenly with salt and black pepper.
  3. Heat a large skillet over medium high heat. Place one tortilla beef side down into the skillet and press firmly to create a smash effect.
  4. Cook for 3 to 4 minutes until the beef develops a crispy crust and reaches an internal temperature of 160 degrees.
  5. Flip the tortilla so the beef side is up. Sprinkle cheese, diced onion, and sliced pickles over half of the tortilla.
  6. Fold the tortilla over the filling and cook for 2 to 3 minutes per side until the tortilla is golden and the cheese is melted.
  7. Remove from the skillet and repeat with remaining tortillas and beef.
  8. Slice each quesadilla into wedges and serve with the prepared sauce on the side.

Notes

  • For extra crispiness, lightly press the folded quesadilla with a spatula while cooking.
