Description
Crispy smash burger quesadilla loaded with juicy beef, melted cheese, and tangy pickles. A quick comfort meal perfect for busy nights.
Ingredients
- 1 pound ground beef
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon yellow mustard
- 1 tablespoon finely chopped pickles
- 4 large flour tortillas
- 1 ½ cups shredded cheddar cheese
- ½ cup diced onion
- ½ cup sliced pickles
- 1 tablespoon olive oil
Instructions
- In a small bowl, mix mayonnaise, ketchup, mustard, and chopped pickles until smooth. Set aside.
- Divide ground beef into 4 equal portions. Place each portion onto a tortilla and press it thinly to cover most of the surface. Season evenly with salt and black pepper.
- Heat a large skillet over medium high heat. Place one tortilla beef side down into the skillet and press firmly to create a smash effect.
- Cook for 3 to 4 minutes until the beef develops a crispy crust and reaches an internal temperature of 160 degrees.
- Flip the tortilla so the beef side is up. Sprinkle cheese, diced onion, and sliced pickles over half of the tortilla.
- Fold the tortilla over the filling and cook for 2 to 3 minutes per side until the tortilla is golden and the cheese is melted.
- Remove from the skillet and repeat with remaining tortillas and beef.
- Slice each quesadilla into wedges and serve with the prepared sauce on the side.
Notes
- For extra crispiness, lightly press the folded quesadilla with a spatula while cooking.
