Ingredients

  • 2 pounds boneless skinless chicken breasts, 6-8 ounces each
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 1/2 cups long-grain white rice, rinsed
  • 4 cups low-sodium chicken broth
  • 1 tablespoon fresh lemon zest
  • 3 tablespoons fresh lemon juice
  • 1 1/2 teaspoons dried thyme
  • 1 1/2 teaspoons dried rosemary
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon black pepper
  • 1 cup frozen peas
  • 1/4 cup chopped fresh parsley


Instructions

  1. Heat olive oil in skillet over medium heat.
  2. Add diced onion and sauté 4 minutes until soft.
  3. Stir in minced garlic and cook 1 minute until fragrant.
  4. Transfer onion mixture to bottom of 6-quart slow cooker.
  5. Place chicken breasts over onion layer.
  6. Sprinkle thyme, rosemary, lemon zest, salt, and pepper evenly over chicken.
  7. Spread rinsed rice around chicken, keeping it level.
  8. Pour chicken broth over rice and chicken to submerge rice fully.
  9. Drizzle lemon juice across top.
  10. Cover and cook on low 3 to 3 1/2 hours, until chicken reaches 165°F internally and rice is tender.
  11. Remove chicken to plate; verify 165°F internal temperature with thermometer for food safety.
  12. Stir peas into rice mixture; shred chicken and return to cooker, mixing gently.
