Description
Tender, saucy slow cooker honey soy chicken cooked with broccoli. This is an easy crockpot chicken dinner for busy nights.
Ingredients
- 2 pounds boneless skinless chicken thighs about 1 inch thick
- ¾ cup chicken broth
- ⅓ cup soy sauce
- 3 tablespoons sesame oil
- 4 tablespoons honey
- 3 cloves garlic minced
- 2 teaspoons hot sauce
- 1 teaspoon onion powder
- 2 tablespoons cornstarch
- 2 cups broccoli florets
Instructions
- Pat the chicken thighs dry and trim excess fat. Place them in a 4 quart slow cooker in a single layer.
- Whisk together the chicken broth, soy sauce, sesame oil, honey, garlic, hot sauce, and onion powder in a bowl until well combined.
- Reserve 4 tablespoons of the sauce mixture and pour the remaining sauce over the chicken.
- Cover and cook on low for 6 hours or on high for 3 hours until the chicken is very tender.
- Whisk the reserved sauce with the cornstarch in a small bowl until smooth.
- Stir the cornstarch slurry into the slow cooker.
- Add the broccoli florets and stir gently to coat.
- Cover and cook on high for 30 minutes until the sauce thickens and the broccoli is tender crisp.
- Stir well and serve hot. Chicken must reach an internal temperature of 165°F before serving.
Notes
- For a thicker sauce, leave the lid slightly ajar during the last 10 minutes of cooking.
