Description

Tender, saucy slow cooker honey soy chicken cooked with broccoli. This is an easy crockpot chicken dinner for busy nights.


Ingredients

  • 2 pounds boneless skinless chicken thighs about 1 inch thick
  • ¾ cup chicken broth
  • ⅓ cup soy sauce
  • 3 tablespoons sesame oil
  • 4 tablespoons honey
  • 3 cloves garlic minced
  • 2 teaspoons hot sauce
  • 1 teaspoon onion powder
  • 2 tablespoons cornstarch
  • 2 cups broccoli florets


Instructions

  1. Pat the chicken thighs dry and trim excess fat. Place them in a 4 quart slow cooker in a single layer.
  2. Whisk together the chicken broth, soy sauce, sesame oil, honey, garlic, hot sauce, and onion powder in a bowl until well combined.
  3. Reserve 4 tablespoons of the sauce mixture and pour the remaining sauce over the chicken.
  4. Cover and cook on low for 6 hours or on high for 3 hours until the chicken is very tender.
  5. Whisk the reserved sauce with the cornstarch in a small bowl until smooth.
  6. Stir the cornstarch slurry into the slow cooker.
  7. Add the broccoli florets and stir gently to coat.
  8. Cover and cook on high for 30 minutes until the sauce thickens and the broccoli is tender crisp.
  9. Stir well and serve hot. Chicken must reach an internal temperature of 165°F before serving.

Notes

  • For a thicker sauce, leave the lid slightly ajar during the last 10 minutes of cooking.
