Ingredients
- 1 ½ pounds boneless skinless chicken breasts
- 2 tablespoons olive oil
- 3 tablespoons fresh lemon juice
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- ½ teaspoon ground cumin
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup plain Greek yogurt
- 1 tablespoon fresh lemon juice
- 1 clove garlic, finely minced
- 2 tablespoons chopped cucumber
- 1 tablespoon chopped fresh dill
- ¼ teaspoon salt
- 6 pita breads
- 1 cup chopped romaine lettuce
- 1 cup diced tomatoes
- ½ cup sliced cucumber
- ¼ cup thinly sliced red onion
Instructions
- In a bowl, whisk olive oil, lemon juice, garlic, oregano, thyme, paprika, cumin, salt, and black pepper.
- Place chicken breasts in the slow cooker and pour the marinade over them, turning to coat evenly.
- Cover and cook on low for 4 to 5 hours or until the chicken is tender and reaches an internal temperature of 165 degrees.
- Remove the chicken and shred it using two forks, then return it to the slow cooker juices to stay moist.
- In a small bowl, mix Greek yogurt, lemon juice, garlic, chopped cucumber, dill, and salt until smooth.
- Warm the pita breads in a skillet over medium heat for about 1 minute per side.
- Fill each pita with shredded chicken, romaine lettuce, diced tomatoes, sliced cucumber, and red onion.
- Drizzle the yogurt sauce over the filling and fold to serve.

- For extra texture, lightly toast the filled pita wraps in a skillet for 1 to 2 minutes before serving.
