Slow Cooker Garlic Butter Beef and Potatoes

Description

Tender slow cooker beef with buttery garlic potatoes in a rich savory sauce. Easy family dinner with simple ingredients and bold flavor.


Ingredients

  • 2.5 pounds beef chuck roast cut into large chunks
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 6 tablespoons unsalted butter melted
  • 5 garlic cloves minced
  • 1 teaspoon dried Italian seasoning
  • 1 half teaspoon crushed red pepper flakes
  • 1 fourth cup fresh parsley chopped
  • 2 pounds baby Yukon gold potatoes halved
  • 1 half cup low sodium beef broth
  • 1 medium onion sliced
  • 1 cup carrots chopped


Instructions

  1. Pat the beef dry using paper towels and season evenly with salt and black pepper.
  2. Heat olive oil in a large skillet over medium high heat. Add beef in batches and sear for 2 to 3 minutes per side until browned. Remove and set aside.
  3. Place halved potatoes in the bottom of a slow cooker. Add the seared beef on top. Scatter onion and carrots over the layers.
  4. In a bowl combine melted butter, minced garlic, Italian seasoning, red pepper flakes, and parsley. Stir well.
  5. Pour beef broth evenly over the ingredients. Drizzle the garlic butter mixture over everything, making sure the beef and potatoes are coated.
  6. Cover and cook on low for 7 hours or on high for 5 hours until the beef is fork tender and potatoes are soft.
  7. Taste and adjust seasoning if needed. For a thicker sauce, lightly mash a few potatoes into the liquid and stir.
  8. Serve warm with extra sauce spooned over the top and garnish with additional parsley.

Notes

  • Searing the beef adds deeper flavor but can be skipped for convenience.
  • For firmer potatoes, add them halfway through cooking.
  • Leftovers store well and taste even better the next day.
