Description

Juicy slow cooker chicken gyros with creamy tzatziki. An easy dinner perfect for busy nights and meal prep.


Ingredients

  • For the chicken:
  • 2 pounds boneless skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 tablespoon lemon juice
  • For the tzatziki:
  • 1 cup plain Greek yogurt
  • 1 cup grated cucumber, squeezed dry
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 clove garlic, finely minced
  • 1 tablespoon chopped fresh dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For serving:
  • 6 pita breads
  • 1 cup chopped romaine lettuce
  • 1 cup diced tomatoes
  • 1/2 cup thinly sliced red onion


Instructions

  1. Mix salt, pepper, garlic powder, onion powder, oregano, paprika, and cumin in a small bowl. Rub the spice mixture evenly over the chicken thighs.
  2. Place the chicken in the slow cooker and drizzle with olive oil and lemon juice. Cover and cook on low for 4 to 5 hours, or until the chicken is tender and reaches an internal temperature of 165°F.
  3. While the chicken cooks, prepare the tzatziki. Grate the cucumber and squeeze out as much liquid as possible using a clean towel.
  4. Combine yogurt, cucumber, lemon juice, olive oil, garlic, dill, salt, and pepper in a bowl. Stir well and refrigerate until ready to serve.
  5. Remove the cooked chicken from the slow cooker and shred using two forks. Return the shredded chicken to the juices and stir to coat.
  6. Warm the pita breads in a dry skillet over medium heat for about 30 seconds per side until soft.
  7. Assemble the gyros by adding shredded chicken to each pita, then topping with lettuce, tomatoes, red onion, and tzatziki.
  8. Serve immediately.
