Ingredients
- For the chicken:
- 2 pounds boneless skinless chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 tablespoon lemon juice
- For the tzatziki:
- 1 cup plain Greek yogurt
- 1 cup grated cucumber, squeezed dry
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 clove garlic, finely minced
- 1 tablespoon chopped fresh dill
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- For serving:
- 6 pita breads
- 1 cup chopped romaine lettuce
- 1 cup diced tomatoes
- 1/2 cup thinly sliced red onion
Instructions
- Mix salt, pepper, garlic powder, onion powder, oregano, paprika, and cumin in a small bowl. Rub the spice mixture evenly over the chicken thighs.
- Place the chicken in the slow cooker and drizzle with olive oil and lemon juice. Cover and cook on low for 4 to 5 hours, or until the chicken is tender and reaches an internal temperature of 165°F.
- While the chicken cooks, prepare the tzatziki. Grate the cucumber and squeeze out as much liquid as possible using a clean towel.
- Combine yogurt, cucumber, lemon juice, olive oil, garlic, dill, salt, and pepper in a bowl. Stir well and refrigerate until ready to serve.
- Remove the cooked chicken from the slow cooker and shred using two forks. Return the shredded chicken to the juices and stir to coat.
- Warm the pita breads in a dry skillet over medium heat for about 30 seconds per side until soft.
- Assemble the gyros by adding shredded chicken to each pita, then topping with lettuce, tomatoes, red onion, and tzatziki.
- Serve immediately.
