Description

Juicy, flavorful, and easy slow cooker chicken gyros with tender chicken, fresh vegetables, and creamy tzatziki sauce.


Ingredients

  • 2 1/2 pounds boneless skinless chicken thighs
  • 1 red onion, diced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon minced garlic
  • 1 tablespoon white vinegar
  • 1 tablespoon dried parsley
  • 2 teaspoons dried oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 8 pita breads
  • 1 cup tzatziki sauce
  • 1 cup diced tomatoes
  • 1 cup sliced cucumbers
  • 1/4 cup chopped fresh parsley


Instructions

  1. Lightly grease the inside of a 4 quart slow cooker.
  2. Place the chicken thighs in the bottom of the slow cooker.
  3. Add the diced red onion, olive oil, lemon juice, minced garlic, white vinegar, dried parsley, oregano, salt, and black pepper over the chicken.
  4. Toss everything gently to coat the chicken evenly with the seasonings.
  5. Cover and cook on low for 4 to 5 hours or on high for 2 1/2 to 3 hours until the chicken is tender and reaches an internal temperature of 165 degrees F.
  6. Remove the chicken from the slow cooker and shred it into bite size pieces using two forks.
  7. Return the shredded chicken to the slow cooker and stir it into the cooking juices.
  8. Warm the pita breads just before serving.
  9. Fill each pita with shredded chicken, tzatziki sauce, diced tomatoes, cucumbers, and fresh parsley.
  10. Serve immediately while warm.

Notes

  • For extra flavor, broil the shredded chicken on a baking sheet for 3 to 4 minutes before serving to create crispy edges.
