Description
Juicy, flavorful, and easy slow cooker chicken gyros with tender chicken, fresh vegetables, and creamy tzatziki sauce.
Ingredients
- 2 1/2 pounds boneless skinless chicken thighs
- 1 red onion, diced
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon minced garlic
- 1 tablespoon white vinegar
- 1 tablespoon dried parsley
- 2 teaspoons dried oregano
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 8 pita breads
- 1 cup tzatziki sauce
- 1 cup diced tomatoes
- 1 cup sliced cucumbers
- 1/4 cup chopped fresh parsley
Instructions
- Lightly grease the inside of a 4 quart slow cooker.
- Place the chicken thighs in the bottom of the slow cooker.
- Add the diced red onion, olive oil, lemon juice, minced garlic, white vinegar, dried parsley, oregano, salt, and black pepper over the chicken.
- Toss everything gently to coat the chicken evenly with the seasonings.
- Cover and cook on low for 4 to 5 hours or on high for 2 1/2 to 3 hours until the chicken is tender and reaches an internal temperature of 165 degrees F.
- Remove the chicken from the slow cooker and shred it into bite size pieces using two forks.
- Return the shredded chicken to the slow cooker and stir it into the cooking juices.
- Warm the pita breads just before serving.
- Fill each pita with shredded chicken, tzatziki sauce, diced tomatoes, cucumbers, and fresh parsley.
- Serve immediately while warm.
Notes
- For extra flavor, broil the shredded chicken on a baking sheet for 3 to 4 minutes before serving to create crispy edges.
