Description

Cozy slow cooker beef and cabbage with tender carrots and potatoes. A comforting all-in-one meal that cooks low and slow for perfect flavor.


Ingredients

  • 3 pounds beef brisket, trimmed
  • 1 onion, cut into wedges
  • 3 cloves garlic, sliced
  • 2 bay leaves
  • 2 teaspoons whole black peppercorns
  • 1 teaspoon mustard seeds
  • 1 teaspoon coriander seeds
  • 3 cups low-sodium beef broth
  • 2 pounds baby gold potatoes, halved
  • 3 large carrots, cut into 2-inch pieces
  • 1 small head green cabbage, cut into 6 wedges
  • 2 tablespoons unsalted butter, melted
  • Chopped parsley, for garnish


Instructions

  1. Place onion wedges in the bottom of a 6-quart slow cooker. Lay the beef brisket on top.
  2. Add garlic, bay leaves, peppercorns, mustard seeds, and coriander seeds. Pour in beef broth to nearly cover the meat.
  3. Cover and cook on low for 8 hours, until the beef is fork-tender.
  4. After 3 hours of cooking, add potatoes and carrots around the beef.
  5. Two hours before serving, add cabbage wedges on top. Continue cooking until all vegetables are tender.
  6. Transfer beef to a cutting board and let rest 10 minutes before slicing across the grain.
  7. Drizzle melted butter over the vegetables and sprinkle parsley on top.
  8. Serve sliced beef with the potatoes, carrots, and cabbage.
