Ingredients
- 2 ½ pounds sweet potatoes, scrubbed and diced into 1-inch cubes
- 3 tablespoons olive oil
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 2 teaspoons olive oil
- 1 ½ pounds lean ground turkey
- 1 cup tomato sauce
- 3 tablespoons tomato paste
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon brown sugar
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- Pickled red onions (optional topping)
- Sliced dill pickles (optional topping)
- Sliced green onions or chives (optional topping)

Instructions
- Preheat the oven to 425°F. Line a large baking sheet with parchment paper.
- Toss sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper in a bowl until coated.
- Spread potatoes in a single layer. Roast for 25 to 30 minutes, turning halfway, until golden and tender.
- Heat olive oil in a large skillet over medium heat while potatoes roast.
- Add ground turkey. Cook 7 to 9 minutes, breaking it apart, until fully cooked.
- Stir in tomato sauce, tomato paste, vinegar, Dijon mustard, brown sugar, paprika, garlic powder, salt, and pepper.
- Simmer uncovered for 10 minutes until thickened and glossy.
- Divide roasted sweet potatoes among bowls.
- Spoon sloppy joe mixture over the potatoes.
- Add your favorite toppings like pickled onions, pickles, or green onions.
- Eat immediately while warm.
