  • 2 ½ pounds sweet potatoes, scrubbed and diced into 1-inch cubes
  • 3 tablespoons olive oil

  • ¼ teaspoon black pepper
  • 2 teaspoons olive oil
  • 1 ½ pounds lean ground turkey
  • 1 cup tomato sauce
  • 3 tablespoons tomato paste
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon brown sugar
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Pickled red onions (optional topping)
  • Sliced dill pickles (optional topping)
  • Sliced green onions or chives (optional topping)
  • Diced avocado (optional topping)


Instructions

  1. Preheat the oven to 425°F. Line a large baking sheet with parchment paper.
  2. Toss sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper in a bowl until coated.
  3. Spread potatoes in a single layer. Roast for 25 to 30 minutes, turning halfway, until golden and tender.
  4. Heat olive oil in a large skillet over medium heat while potatoes roast.
  5. Add ground turkey. Cook 7 to 9 minutes, breaking it apart, until fully cooked.
  6. Stir in tomato sauce, tomato paste, vinegar, Dijon mustard, brown sugar, paprika, garlic powder, salt, and pepper.
  7. Simmer uncovered for 10 minutes until thickened and glossy.
  8. Divide roasted sweet potatoes among bowls.
  9. Spoon sloppy joe mixture over the potatoes.
  10. Add your favorite toppings like pickled onions, pickles, or green onions.
  11. Eat immediately while warm.
