Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 2 medium zucchini, diced into 1/2-inch pieces
  • 2 cups frozen sweet corn
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Heat olive oil and butter in a large skillet over medium-high heat.
  2. Add the diced zucchini to the skillet. Cook for 5-7 minutes, stirring occasionally, until it begins to soften and brown lightly.
  3. Stir in the frozen corn and minced garlic. Continue cooking for another 4-5 minutes until the corn is heated through and the garlic is fragrant.
  4. Season the vegetables with dried oregano, smoked paprika, salt, and black pepper. Stir well to combine.
  5. Cook for 2 more minutes until the zucchini is tender-crisp.
  6. Remove the skillet from the heat.
  7. Stir in the grated Parmesan cheese and fresh parsley until the cheese is melted.
