Ingredients
- 1.5 pounds boneless skinless chicken thighs cut into 2 inch pieces
- 1 pound baby potatoes halved
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper
- 0.75 teaspoon paprika
- 0.5 teaspoon garlic powder
- 0.5 teaspoon dried oregano
Instructions
- Pat the chicken dry and season with salt, black pepper, paprika, garlic powder, and oregano.
- Heat olive oil in a large skillet over medium heat.
- Add potatoes cut side down and cook 8 to 10 minutes until golden and mostly tender.
- Push potatoes to the sides of the skillet.
- Add chicken pieces in a single layer.
- Cook chicken 5 to 6 minutes without moving until browned.
- Stir and continue cooking 6 to 8 minutes until chicken is cooked through and potatoes are fork tender.
- Remove from heat and rest 3 minutes before serving.
Notes
- For food safety, cook chicken to an internal temperature of 165°F measured at the thickest piece.
