Ingredients
- 12 ounces semi sweet chocolate finely chopped
- 2/3 cup heavy cream
- 1 tablespoon unsalted butter
- Unsweetened cocoa powder (for coating)
- Finely chopped nuts (for coating)
- Powdered sugar (for coating)
Instructions
- Place the chopped chocolate in a heat safe bowl.
- Heat the heavy cream in a small saucepan over medium heat until it just begins to steam. Do not boil.
- Pour the hot cream over the chocolate and let sit for 3 minutes.
- Add the butter and stir gently until the mixture is completely smooth and glossy.
- Cover the bowl and refrigerate for 2 hours until firm enough to scoop.
- Use a small cookie scoop or spoon to portion the mixture and roll into balls.
- Roll each truffle in cocoa powder, chopped nuts, or powdered sugar to coat evenly.
- Refrigerate for 30 minutes before serving for best texture.
