Ingredients
- 1 pound raw shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup mango, diced
- 1/2 cup red onion, finely diced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons fresh lime juice
- 1/4 teaspoon salt
- 8 small corn tortillas
Instructions
- Toss shrimp with olive oil, chili powder, cumin, garlic powder, salt, and black pepper in a bowl.
- Heat a skillet over medium-high heat and cook shrimp for 2 to 3 minutes per side until pink and cooked through.
- Combine mango, red onion, cilantro, lime juice, and salt in a separate bowl to make the salsa.
- Warm tortillas in a dry skillet or microwave.
- Fill tortillas with cooked shrimp and top with mango salsa.
- Serve immediately.
