Description
A simple and flavorful dinner with tender salmon fillets glazed in a savory sweet sauce and roasted alongside crisp vegetables. Everything cooks on one pan for easy cleanup and a balanced meal.
Ingredients
- 4 salmon fillets about 6 ounces each
- 2 cups broccoli florets
- 1 red bell pepper sliced
- 1 cup snap peas
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- For the teriyaki sauce:
- 1/3 cup low sodium soy sauce
- 2 tablespoons honey
- 1 tablespoon brown sugar
- 2 cloves garlic minced
- 1 teaspoon grated fresh ginger
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- Preheat oven to 400°F and line a large sheet pan with parchment paper.
- In a small bowl, whisk together soy sauce, honey, brown sugar, garlic, and ginger. In a separate small bowl, mix cornstarch and water, then stir into the sauce mixture.
- Place broccoli, bell pepper, and snap peas on the sheet pan. Drizzle with olive oil, salt, and black pepper, then toss to coat and spread into an even layer.
- Roast vegetables for 10 minutes.
- Remove the pan from the oven and push vegetables to the sides. Place salmon fillets in the center.
- Brush half of the teriyaki sauce over the salmon.
- Return the pan to the oven and bake for 10 to 12 minutes until the salmon flakes easily with a fork and reaches an internal temperature of 145°F.
- While the salmon cooks, transfer the remaining sauce to a small saucepan and simmer over medium heat for 2 to 3 minutes until thickened.
- Drizzle the thickened sauce over the salmon and vegetables before serving.
- Serve immediately.
Notes
- For extra flavor, sprinkle with sesame seeds and sliced green onions before serving.
