Ingredients
- 12 ounces smoked chicken sausage, sliced into rounds
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium zucchini, sliced
- 1 small red onion, sliced
- 2 cups baby potatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 425°F and line a large sheet pan with parchment paper.
- In a large bowl, combine potatoes, broccoli, bell peppers, zucchini, and red onion.
- Drizzle with olive oil and sprinkle with garlic powder, paprika, oregano, salt, and black pepper. Toss until evenly coated.
- Spread vegetables onto the sheet pan in an even layer. Roast for 15 minutes.
- Remove the pan from the oven and add the sliced sausage, tossing gently to combine.
- Return to the oven and roast for another 12 to 15 minutes, until potatoes are tender and sausage is browned.
- Serve warm straight from the pan.
Notes
- Cut vegetables into similar-sized pieces for even roasting.
- For extra browning, broil for 2 to 3 minutes at the end.
