Description

Creamy scalloped sweet potatoes bake with brown sugar and warm spices for a tender, cozy side dish.


Ingredients

  • 5 medium sweet potatoes, peeled and thinly sliced
  • 4 tablespoons unsalted butter
  • ¼ cup light brown sugar, packed
  • ½ cup water
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves
  • ½ teaspoon salt
  • ¼ cup chopped pecans
  • 1 tablespoon maple syrup
  • 1 tablespoon fresh thyme leaves (optional for garnish)


Instructions

  1. Preheat oven to 400°F. Grease a 2-quart baking dish lightly with butter or oil.
  2. Arrange sweet potato slices in overlapping layers in the dish.
  3. In a small saucepan, melt butter over medium heat. Stir in brown sugar, water, cinnamon, nutmeg, cloves, and salt until smooth and slightly thickened, about 3 minutes.
  4. Pour half of the sauce evenly over the layered sweet potatoes.
  5. Cover with foil and bake for 40 minutes until tender.
  6. Remove foil, pour the remaining sauce evenly over the potatoes, and sprinkle chopped pecans on top.
  7. Drizzle with maple syrup and return to the oven, uncovered, for 10 to 15 minutes until bubbly and lightly caramelized.
  8. Let cool for 10 minutes before serving. Garnish with thyme if desired.
