Ingredients

  • 2 tablespoons olive oil
  • 1 cup baby potatoes diced small
  • 0.5 cup diced yellow onion
  • 1 cup zucchini diced
  • 1 red bell pepper diced
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.5 teaspoon garlic powder
  • 4 large eggs
  • 0.75 cup shredded cheddar cheese


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add potatoes and cook 8 to 10 minutes, stirring occasionally, until mostly tender.
  3. Stir in onion and cook 2 minutes until softened.
  4. Add zucchini and bell pepper to the skillet.
  5. Season with salt, black pepper, paprika, and garlic powder.
  6. Cook 5 to 6 minutes until vegetables are tender and lightly browned.
  7. Make four shallow wells in the vegetables.
  8. Crack one egg into each well.
  9. Sprinkle cheddar cheese evenly over the skillet.
  10. Cover and cook 4 to 5 minutes until egg whites are set and cheese is melted.
  11. Remove from heat and serve warm.
