Ingredients
- 2 tablespoons olive oil
- 1 cup baby potatoes diced small
- 0.5 cup diced yellow onion
- 1 cup zucchini diced
- 1 red bell pepper diced
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper
- 0.5 teaspoon paprika
- 0.5 teaspoon garlic powder
- 4 large eggs
- 0.75 cup shredded cheddar cheese
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add potatoes and cook 8 to 10 minutes, stirring occasionally, until mostly tender.
- Stir in onion and cook 2 minutes until softened.
- Add zucchini and bell pepper to the skillet.
- Season with salt, black pepper, paprika, and garlic powder.
- Cook 5 to 6 minutes until vegetables are tender and lightly browned.
- Make four shallow wells in the vegetables.
- Crack one egg into each well.
- Sprinkle cheddar cheese evenly over the skillet.
- Cover and cook 4 to 5 minutes until egg whites are set and cheese is melted.
- Remove from heat and serve warm.
