Description

Savory cottage cheese toast topped with hot honey and chili. This high-protein breakfast or snack is ready in 10 minutes. It offers a creamy, spicy, and perfectly balanced flavor profile.

Ingredients

  • 2 slices sourdough bread
  • ¾ cup whole milk cottage cheese
  • 2 tablespoons thinly sliced green onions
  • 1 small radish, thinly sliced
  • ¼ teaspoon flaky sea salt
  • ¼ teaspoon black pepper
  • 1 tablespoon extra virgin olive oil
  • 3 tablespoons honey (for hot honey)
  • 1 teaspoon red chili flakes (for hot honey)
  • ½ teaspoon apple cider vinegar (for hot honey)

Instructions

  1. Add the honey and red chili flakes to a small saucepan over medium-low heat. Warm gently for 1-2 minutes until small bubbles form around the edges, stirring occasionally.
  2. Remove the pan from heat. Stir in the apple cider vinegar. Let the mixture infuse for 5 minutes while you prepare the toast.
  3. Toast the sourdough slices in a toaster or toaster oven until golden brown and crispy on the edges, about 3-4 minutes.
  4. Brush each warm toast slice with olive oil while still hot to help it absorb flavor.
  5. Stir the cottage cheese in its container to create an even consistency. Spread a generous layer of cottage cheese on each toast slice, dividing it evenly.
  6. Arrange the sliced radishes evenly over the cottage cheese, then sprinkle with green onions.
  7. Drizzle the warm hot honey over each toast, adjusting the amount based on your heat preference.
  8. Finish with a pinch of flaky sea salt and black pepper on each toast. Serve immediately while the toast is still warm and crispy.

Notes

  • Make a larger batch of hot honey and store it in a glass jar for up to 3 months.
  • Choose cottage cheese with large curds for better texture.
  • Toast the bread to a medium-dark shade to maintain crispiness after topping.
  • Slice the radishes paper-thin for a delicate crunch.
  • Let the hot honey cool slightly before drizzling for less intense heat.
  • The assembled toast does not store well; eat immediately.
  • If meal prepping, store components separately in the refrigerator for up to 2 days, then assemble before serving.
