Ingredients

  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 6 tablespoons cold unsalted butter, cubed
  • 1 cup shredded sharp cheddar cheese
  • ¾ cup cooked beef bacon, finely chopped
  • ¾ cup cold whole milk


Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, salt, and black pepper.
  3. Cut the cold butter into the dry ingredients until the mixture resembles coarse crumbs with visible butter pieces.
  4. Stir in the shredded cheddar cheese and chopped beef bacon until evenly distributed.
  5. Pour in the milk and mix just until a shaggy dough forms and no dry flour remains.
  6. Turn the dough onto a lightly floured surface and gently knead 5 to 6 times until it comes together.
  7. Pat the dough into a 1 inch thick circle and cut into 8 equal wedges.
  8. Transfer the scones to the prepared baking sheet, spacing them 2 inches apart.
  9. Bake for 16 to 18 minutes until puffed and golden brown on top.
