Ingredients
- 1 medium butternut squash, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup crumbled feta cheese
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat your oven to 425°F. Line a baking sheet with parchment paper.
- Place the cubed butternut squash in a large bowl.
- Drizzle with olive oil and season with garlic powder, thyme, paprika, salt, and black pepper. Toss until evenly coated.
- Spread the squash in a single layer on the prepared baking sheet.
- Roast for 28 to 32 minutes, stirring halfway through, until the squash is tender and caramelized around the edges.
- Transfer the roasted squash to a serving dish and sprinkle with crumbled feta cheese and fresh parsley.
- Serve warm.
