Description

A light and easy side dish made with creamy yogurt, fresh herbs, and crisp cucumbers.


Ingredients

  • 2 cups cucumbers thinly sliced
  • 1 cup plain Greek yogurt
  • 1 clove garlic minced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 half teaspoon salt
  • 1 quarter teaspoon black pepper
  • 2 tablespoons fresh dill chopped


Instructions

  1. Place the sliced cucumbers in a bowl and lightly pat dry to remove excess moisture.
  2. In a separate bowl mix Greek yogurt garlic lemon juice olive oil salt and black pepper until smooth.
  3. Add the cucumbers to the yogurt mixture and toss until evenly coated.
  4. Stir in the chopped dill and mix gently.
  5. Chill for at least 15 minutes before serving for best flavor.
  6. Serve cold as a refreshing side dish.

  • For extra crisp texture use English cucumbers and chill the salad before serving.
