Description
This healthy ranch chicken salad features tender chicken, fresh vegetables, and a creamy homemade ranch dressing. It is a protein-rich meal ready in 20 minutes, perfect for a light lunch or dinner.
Ingredients
- 1 pound boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups chopped romaine lettuce
- 1 cup cherry tomatoes, halved
- 1/2 cup diced cucumber
- 1/2 cup shredded carrots
- 1/4 cup sliced red onion
- 1/4 cup shredded cheddar cheese (optional)
- 1/2 cup plain Greek yogurt
- 2 tablespoons mayonnaise
- 1 teaspoon lemon juice
- 1 teaspoon dried dill
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
- 1–2 tablespoons water to thin, if needed
Instructions
- Preheat oven to 400°F or heat a grill pan over medium-high heat.
- Rub chicken breasts with olive oil, garlic powder, paprika, salt, and pepper.
- Bake or grill chicken for 18–20 minutes, or until cooked through and the internal temperature reaches 165°F. Let rest for 5 minutes, then slice.
- In a small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, dill, garlic powder, onion powder, parsley, salt, and pepper. Adjust consistency with water if needed.
- In a large serving bowl, combine lettuce, tomatoes, cucumber, carrots, and red onion. Add sliced chicken on top.
- Drizzle with the ranch dressing and toss gently to coat.
- Sprinkle with shredded cheddar before serving, if desired.
