A simple and delicious bowl featuring tender BBQ chicken, creamy cottage cheese dressing, and melted cheddar cheese. Perfect for a quick and healthy meal.
Ingredients
- 1 chicken filet
- ½ cup low-fat cottage cheese
- 2 tbsp Ranch dressing
- 2 tbsp Shredded cheddar cheese (reduced fat)
- 2 tbsp BBQ sauce
Instructions
- Preheat oven to 400°F (200°C). Place chicken filet on a baking tray and cook for 20 minutes, or until internal temperature reaches 165°F (75°C).
- While chicken cooks, mix cottage cheese and ranch dressing in a bowl until smooth and creamy.
- Remove cooked chicken from oven. Heat BBQ sauce in a separate pan, then toss the chicken breast in the sauce until well coated.
- Combine BBQ chicken and cottage cheese mixture in a bowl. Drizzle with extra BBQ sauce and shredded cheddar cheese.
