Soft and delicious pumpkin sugar cookies topped with creamy cream cheese frosting, perfect for fall gatherings.
Ingredients
- 2 3/4 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp nutmeg
- 1/4 tsp ground cloves
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup pumpkin purée
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1 tsp vanilla extract
- Pinch of salt
- 1/4 tsp cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C). In a bowl, whisk together the flour, baking powder, baking soda, salt, and spices. In a separate large bowl, beat the butter and sugars until fluffy. Beat in the egg, vanilla, and pumpkin purée. Gradually mix in the dry ingredients until just combined.
- Drop rounded tablespoons of dough onto a parchment-lined baking sheet. Bake for 10-12 minutes, until the edges are set. Let them cool completely on a wire rack.
- While the cookies cool, beat the cream cheese and butter until smooth. Gradually add the powdered sugar, vanilla, salt, and optional cinnamon. Beat until the frosting is light and fluffy.
- Once the cookies are completely cooled, spread the cream cheese frosting on top of each one. Sprinkle with a little extra cinnamon if you like.
