Ingredients
- For the pumpkin muffins:
- 1 1/2 cups pumpkin puree
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 3/4 cups all purpose flour
- 1/2 cup vegetable oil
- 1/4 cup milk
- 2 eggs, room temperature
- 2 teaspoons vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
- For the streusel:
- 1/4 cup unsalted butter, melted
- 1/2 cup all-purpose flour
- 1/2 cup light brown sugar
- 1/2 teaspoon salt
- 1/2 cup pecans, finely chopped
- 1 teaspoon maple syrup
- For the glaze (optional):
- 1/2 cup powdered sugar
- 2 tablespoons milk
- splash of vanilla extract
- pinch of salt
Instructions
- Preheat oven to 375°F. Line 12 muffin cups with muffin liners and spray with cooking spray. Set aside.
- In a large bowl, combine the pumpkin puree, sugars, vegetable oil, milk, eggs, and vanilla extract. Mix well.
- Add the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
- Incorporate the dry ingredients into the wet, stirring until well combined.
- Scoop batter into prepared muffin tins, filing just over ⅔ of the way. Set aside.
- To make the streusel, combine all streusel ingredients in a bowl. Stir together until the mixture resembles wet sand. Sprinkle the streusel over the muffin batter, dividing it evenly among the 12 muffins.
- Bake for 15-17 minutes at 375°F. Take the muffins out when a knife inserted into the center comes out mostly clean. Allow to cool slightly.
- While the muffins cool, make the glaze. Combine all the ingredients into a small bowl and mix to combine. Drizzle the glaze over the muffins and serve.

- Optional glaze can be added for extra sweetness.
- Ensure muffin center is mostly clean when testing for doneness.
