Ingredients
- 2¼ cups gluten-free flour
- 2 tsp gluten-free baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg

- 1/2 cup vegan butter
- 1/4 cup sunflower oil
- 1 cup brown sugar
- 1 cup canned pumpkin puree
- 1/4 cup pure maple syrup
- 6 tbsp aquafaba
Instructions
- Preheat oven to 350°F and lightly grease a baking pan.
- In a large bowl, whisk together gluten-free flour, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, beat vegan butter, sunflower oil, brown sugar, pumpkin puree, and maple syrup until smooth.

- Gradually add wet mixture into dry ingredients, stirring until just combined—don’t overmix.
- Spread batter evenly in the prepared pan.
