Description
These fudgy pumpkin chocolate chip bars are the ultimate fall treat, packed with gooey chocolate chips and simple to make in one pan.
Ingredients
- 1 cup butter (2 sticks)
- 1 tablespoon pumpkin pie spice
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 1 cup canned pumpkin puree
- 2 teaspoons vanilla
- ½ teaspoon kosher salt
- 1 large egg
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 cup semisweet chocolate chips
- 1 cup dark chocolate chips
Instructions
- Preheat oven to 350°F.
- Line a 9×13 inch pan with parchment paper.
- Melt butter in a saucepan over medium heat.
- Add pumpkin pie spice to the hot butter and toast for a few seconds.
- Remove pan from heat. Stir in granulated sugar and brown sugar.
- Add pumpkin puree, vanilla, and salt.
- Add the egg and stir vigorously.
- Add flour and baking powder. Stir gently until just combined. Do not overmix.
- Pour batter into the prepared pan and spread evenly.
- Sprinkle chocolate chips over the top and gently fold them into the batter.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool completely before slicing.
Notes
- Toast the pumpkin pie spice in the butter to enhance its flavor.
- Be careful not to overmix the batter after adding the flour.
- Cool the bars completely before cutting for the best texture.
