Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 6 slices turkey bacon
  • 5 large eggs
  • 1/4 cup whole milk
  • 1/2 cup shredded sharp cheddar cheese
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • Nonstick cooking spray


Instructions

  1. Preheat the oven to 400°F and coat a standard 12-cup muffin tin with nonstick cooking spray.
  2. Heat a large skillet over medium heat and cook the turkey bacon strips for 4 to 5 minutes per side until browned and crispy.
  3. Transfer the cooked bacon to a plate lined with paper towels to drain excess grease and then chop it into small crumbles once cool.
  4. Dust a flat surface with the all-purpose flour and unfold the thawed puff pastry sheet onto it.
  5. Roll the dough gently with a rolling pin to smooth the seams and flatten the sheet slightly.
  6. Cut the sheet into 9 equal squares using a sharp knife or pizza cutter.
  7. Press one pastry square into each of 9 muffin cups and gently stretch the corners upward to cover the sides.
  8. Prick the bottom of the dough in each cup two times with a fork to prevent over-puffing without piercing all the way through the pastry.
  9. Distribute the shredded cheddar cheese and crumbled turkey bacon evenly among the pastry cups.
  10. Whisk the eggs, whole milk, chopped chives, sea salt, and black pepper in a medium bowl until fully combined.
  11. Pour the egg mixture carefully over the solids in each cup until they are filled about three-quarters of the way to the top.
  12. Bake for 18 to 22 minutes until the pastry is golden brown and an internal thermometer inserted into the center of the egg mixture reads 160°F.
