Description

A creamy, high protein make ahead breakfast or snack with almond butter and Greek yogurt.


Ingredients

  • 2 tablespoons chia seeds
  • 1 cup unsweetened almond milk
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons almond butter divided
  • 1/4 cup fresh blueberries
  • 1 tablespoon sliced almonds


Instructions

  1. In a medium bowl or jar, whisk together almond milk, Greek yogurt, honey, and vanilla extract until smooth.
  2. Stir in chia seeds until evenly distributed.
  3. Cover and refrigerate for at least 4 hours or overnight until thickened and pudding like. Stir once after 30 minutes to prevent clumping.
  4. Before serving, stir in 1 tablespoon almond butter until fully combined for extra creaminess.
  5. Transfer to serving bowls or keep in jars for meal prep.
  6. Top with remaining 1 tablespoon almond butter, fresh blueberries, and sliced almonds. Serve chilled.
