Description

Learn how to make crispy oven-baked potato skins, a perfect appetizer for any occasion. This recipe is simple enough for beginners.

Ingredients

  • 6 small baking potatoes
  • 2 tablespoons unsalted butter, melted
  • ½ teaspoon dried parsley
  • ¼ teaspoon seasoned salt
  • ¼ teaspoon garlic powder
  • 3 slices beef bacon, cooked and crumbled (or 3 tablespoons beef bacon bits)
  • 2 tablespoons sliced green onions or chives
  • 1 cup shredded cheddar cheese
  • Sour cream for serving

Instructions

  1. Preheat your oven to 425°F.
  2. Scrub the potatoes and poke each potato with a fork 5-6 times. Place them directly on the middle rack of the oven. Bake for 40-50 minutes or until tender when poked with a fork.
  3. Remove potatoes from the oven and let them cool until they are easy to handle.
  4. Cut the potatoes in half lengthwise. Using a small spoon, scoop out the flesh, leaving a ¼-inch thick shell.
  5. In a small bowl, combine melted butter, parsley, seasoned salt, and garlic powder. Brush the inside and outside of the potato shells with the butter mixture.
  6. Place the potato shells cut side down in a baking dish or 9×13 inch pan. Bake for 15 minutes.
  7. Flip the potato shells over and bake for an additional 5 minutes, or until slightly browned and crisp.
  8. Fill each potato skin with shredded cheddar cheese and crumbled beef bacon.
  9. Return the potato skins to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven, top with sliced green onions, and serve with sour cream.

Notes

  • For extra crispiness, you can bake the potato shells for a few extra minutes after flipping them.
  • Feel free to substitute the beef bacon with regular bacon or other preferred toppings.
  • Chives can be used instead of green onions for a milder onion flavor.
