Description
This pineapple infusion mocktail is sweet, refreshing, and made with fresh pineapple for a smooth alcohol free drink perfect for entertaining. It is bright and ideal for summer drinks and party pitchers.
Ingredients
- 1 large ripe pineapple peeled, cored, and cut into chunks
- 4 cups pineapple juice not from concentrate
- Ice (to serve)
- Sparkling water (to serve)
Instructions
- Place the pineapple chunks into a large glass jar or pitcher with a tight fitting lid.
- Pour the pineapple juice over the pineapple, making sure all pieces are fully submerged.
- Cover and refrigerate for 24 to 48 hours to allow the pineapple flavor to infuse the juice.
- Strain the liquid through a fine mesh strainer into a clean pitcher and discard the pineapple solids.
- To serve, fill glasses with ice and pour the pineapple infusion halfway up the glass.
- Top with sparkling water, stir gently, and serve immediately.
