Description

This pineapple infusion mocktail is sweet, refreshing, and made with fresh pineapple for a smooth alcohol free drink perfect for entertaining. It is bright and ideal for summer drinks and party pitchers.


Ingredients

  • 1 large ripe pineapple peeled, cored, and cut into chunks
  • 4 cups pineapple juice not from concentrate
  • Ice (to serve)
  • Sparkling water (to serve)


Instructions

  1. Place the pineapple chunks into a large glass jar or pitcher with a tight fitting lid.
  2. Pour the pineapple juice over the pineapple, making sure all pieces are fully submerged.
  3. Cover and refrigerate for 24 to 48 hours to allow the pineapple flavor to infuse the juice.
  4. Strain the liquid through a fine mesh strainer into a clean pitcher and discard the pineapple solids.
  5. To serve, fill glasses with ice and pour the pineapple infusion halfway up the glass.
  6. Top with sparkling water, stir gently, and serve immediately.
