Description

Easy party appetizer featuring beef cocktail sausages slow-cooked in a sweet and savory pineapple brown sugar glaze.


Ingredients

  • 28 ounces beef cocktail sausages, fully cooked
  • 1 cup pineapple juice
  • 1 cup pineapple chunks, drained
  • 3/4 cup packed brown sugar
  • 1 tablespoon low sodium soy sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon crushed red pepper flakes
  • 1 tablespoon cornstarch
  • 1 tablespoon water


Instructions

  1. In a medium bowl, whisk together pineapple juice, brown sugar, soy sauce, garlic powder, onion powder, black pepper, and crushed red pepper flakes until the sugar is mostly dissolved.
  2. Place the beef cocktail sausages in a 4 to 6 quart slow cooker. Pour the pineapple glaze over the sausages and stir gently to coat evenly.
  3. Fold in the pineapple chunks, distributing them throughout the mixture.
  4. Cover and cook on LOW for 3 to 4 hours or on HIGH for 1 1/2 to 2 hours until the sausages are heated through and the sauce is bubbling.
  5. In a small bowl, stir together cornstarch and water to create a slurry. Pour into the slow cooker and stir well.
  6. Cover and cook on HIGH for an additional 15 to 20 minutes until the sauce thickens into a glossy glaze that coats the sausages.
  7. Switch the slow cooker to WARM for serving. Stir gently before serving to keep the glaze evenly distributed.
  8. Heat fully cooked beef sausages to an internal temperature of 165 degrees F before serving to ensure they are safe to eat.
