Description
Easy party appetizer featuring beef cocktail sausages slow-cooked in a sweet and savory pineapple brown sugar glaze.
Ingredients
- 28 ounces beef cocktail sausages, fully cooked
- 1 cup pineapple juice
- 1 cup pineapple chunks, drained
- 3/4 cup packed brown sugar
- 1 tablespoon low sodium soy sauce
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/8 teaspoon crushed red pepper flakes
- 1 tablespoon cornstarch
- 1 tablespoon water
Instructions
- In a medium bowl, whisk together pineapple juice, brown sugar, soy sauce, garlic powder, onion powder, black pepper, and crushed red pepper flakes until the sugar is mostly dissolved.
- Place the beef cocktail sausages in a 4 to 6 quart slow cooker. Pour the pineapple glaze over the sausages and stir gently to coat evenly.
- Fold in the pineapple chunks, distributing them throughout the mixture.
- Cover and cook on LOW for 3 to 4 hours or on HIGH for 1 1/2 to 2 hours until the sausages are heated through and the sauce is bubbling.
- In a small bowl, stir together cornstarch and water to create a slurry. Pour into the slow cooker and stir well.
- Cover and cook on HIGH for an additional 15 to 20 minutes until the sauce thickens into a glossy glaze that coats the sausages.
- Switch the slow cooker to WARM for serving. Stir gently before serving to keep the glaze evenly distributed.
- Heat fully cooked beef sausages to an internal temperature of 165 degrees F before serving to ensure they are safe to eat.
