Ingredients
- 3 ripe peaches, sliced
- 2 cups cherry tomatoes, halved
- 8 ounces burrata cheese
- 1/4 cup fresh basil leaves
- 2 cups arugula
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Wash and slice the peaches into thin wedges. Halve the cherry tomatoes.
- Arrange arugula on a large serving platter as the base.
- Layer the peach slices and tomatoes over the arugula.
- Tear the burrata gently and place pieces across the salad.
- Scatter fresh basil leaves over the top.
- Whisk together olive oil, lemon juice, honey, salt, and black pepper in a small bowl.
- Drizzle the dressing evenly over the salad just before serving.
- Serve immediately.
