Ingredients

  • 3 ripe peaches, sliced
  • 2 cups cherry tomatoes, halved
  • 8 ounces burrata cheese
  • 1/4 cup fresh basil leaves
  • 2 cups arugula
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Wash and slice the peaches into thin wedges. Halve the cherry tomatoes.
  2. Arrange arugula on a large serving platter as the base.
  3. Layer the peach slices and tomatoes over the arugula.
  4. Tear the burrata gently and place pieces across the salad.
  5. Scatter fresh basil leaves over the top.
