Description

Make peach baked oatmeal with fresh peaches for a warm and easy summer breakfast. Soft, lightly sweet, and good for meal prep.


Ingredients

  • 2 cups old fashioned oats
  • 1 teaspoon baking powder
  • 1 half teaspoon ground cinnamon
  • 1 quarter teaspoon salt
  • 2 cups milk
  • 1 quarter cup maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups fresh peaches diced


Instructions

  1. Preheat oven to 350°F and lightly grease a baking dish.
  2. In a bowl mix oats baking powder cinnamon and salt.
  3. In another bowl whisk milk maple syrup egg and vanilla extract.
  4. Combine the wet and dry ingredients and stir until well mixed.
  5. Fold in the diced peaches evenly.
  6. Pour the mixture into the prepared baking dish and spread evenly.
  7. Bake for 35 to 40 minutes until set and lightly golden on top.
  8. Let cool slightly before serving.

Notes

  • Letting the oatmeal rest for a few minutes after baking helps it firm up and makes it easier to serve.
