Description
Make peach baked oatmeal with fresh peaches for a warm and easy summer breakfast. Soft, lightly sweet, and good for meal prep.
Ingredients
- 2 cups old fashioned oats
- 1 teaspoon baking powder
- 1 half teaspoon ground cinnamon
- 1 quarter teaspoon salt
- 2 cups milk
- 1 quarter cup maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups fresh peaches diced
Instructions
- Preheat oven to 350°F and lightly grease a baking dish.
- In a bowl mix oats baking powder cinnamon and salt.
- In another bowl whisk milk maple syrup egg and vanilla extract.
- Combine the wet and dry ingredients and stir until well mixed.
- Fold in the diced peaches evenly.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 35 to 40 minutes until set and lightly golden on top.
- Let cool slightly before serving.
Notes
- Letting the oatmeal rest for a few minutes after baking helps it firm up and makes it easier to serve.
