Description

Enjoy a delicious and easy pasta salad, perfect for any occasion. This recipe is designed for beginners, making cooking fun and stress-free.


Ingredients

  • 16 oz rotini
  • 1 medium cucumber, chopped
  • 1 pint grape tomatoes, halved
  • 1 small bell pepper, chopped
  • 1/4 cup finely diced red onion
  • 1 cup Italian dressing
  • 2/3 cup crumbled feta cheese
  • 1/4 cup sliced black olives
  • 3 tablespoons chopped fresh parsley
  • Salt and black pepper, to taste


Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions. Drain and rinse under cold water to cool.
  2. While pasta cools, chop the cucumber, grape tomatoes, bell pepper, and red onion into small pieces.
  3. In a large bowl, combine cooled pasta, chopped vegetables, Italian dressing, feta cheese, black olives, and parsley. Season with salt and pepper, then toss until everything is well coated.
  4. Serve immediately, or chill in the refrigerator for up to an hour to let flavors meld.

Notes

  • For an optional homemade Italian dressing, whisk together: 1/2 cup olive oil, 1/4 cup red wine vinegar, 1 tsp honey, 1 tsp Dijon mustard, 1 tsp Italian seasoning, 1 clove minced garlic, and salt & pepper to taste.
