Ingredients
- 16 oz rotini
- 1 medium cucumber, chopped
- 1 pint grape tomatoes, halved
- 1 small bell pepper, chopped
- 1/4 cup finely diced red onion
- 1 cup Italian dressing
- 2/3 cup crumbled feta cheese
- 1/4 cup sliced black olives
- 3 tablespoons chopped fresh parsley
- Salt and black pepper, to taste
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions. Drain and rinse under cold water to cool.
- While pasta cools, chop the cucumber, grape tomatoes, bell pepper, and red onion into small pieces.
- In a large bowl, combine cooled pasta, chopped vegetables, Italian dressing, feta cheese, black olives, and parsley. Season with salt and pepper, then toss until everything is well coated.
- Serve immediately, or chill in the refrigerator for up to an hour to let flavors meld.
Notes
- For an optional homemade Italian dressing, whisk together: 1/2 cup olive oil, 1/4 cup red wine vinegar, 1 tsp honey, 1 tsp Dijon mustard, 1 tsp Italian seasoning, 1 clove minced garlic, and salt & pepper to taste.
