Description

This parmesan crusted chicken provides a crispy, cheesy coating with juicy meat, finished in the oven for a simple restaurant-style meal at home.


Ingredients

  • 4 boneless skinless chicken breasts about 6 ounces each pounded to even thickness
  • 1/2 cup all purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 1 cup seasoned bread crumbs
  • 3/4 cup grated parmesan cheese divided
  • 1 teaspoon Italian seasoning
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic minced
  • 1 tablespoon chopped fresh parsley


Instructions

  1. Preheat your oven to 375°F. Lightly grease a baking dish.
  2. Prepare three bowls. Place flour in the first. Whisk eggs and milk in the second. Mix bread crumbs, half of the parmesan, Italian seasoning, salt, and pepper in the third.
  3. Dredge each chicken breast in flour. Dip it in the egg mixture. Coat it fully in the breadcrumb mixture.
  4. Heat olive oil in a large skillet over medium heat. Sear chicken 3 to 4 minutes per side until golden brown.
  5. Transfer the seared chicken to the prepared baking dish.
  6. Combine mozzarella, remaining parmesan, and minced garlic. Spoon this mixture evenly over each chicken breast.
  7. Bake uncovered for 18 to 22 minutes until the chicken reaches an internal temperature of 165°F and the cheese melts and bubbles.
  8. Remove from the oven. Rest the chicken for 5 minutes before serving. Garnish with parsley.
